Lesson 1: Allergens

The FDA’s 9 Common Allergens

It is very important that food establishments have control of allergenic substances in product formulations and in the prevention of cross-contact.

Allergens in Other Countries

If you are exporting foods to another country, be aware that each country has its own list of allergens that are required to be on the label.  Some examples of other allergens include:

  • Mustard-one of the most common spice allergies
  • Celery-allergy to celery is associated with allergy to birch and mugwort pollen
  • Lupin(e)-a legume belonging to the same plant family as peanuts
  • Sulfites-used as preservatives in some drinks, foods, and medications
  • Other cereal grains that contain gluten such as rye and oats
