Module 3 Objectives

In this lesson module we cover the Big 8 allergens according to the FDA. Additionally, we look at best practices for controlling ingredients, labeling, and managing food production in a facility with allergens.

Learning Objectives

After completing this lesson, you will be able to:

  • Explain the difference between allergen cross-contact and cross-contamination.
  • List the Big 9 allergens in the U.S.
  • Describe the different ways a facility can manage allergens.
  • Describe how sanitation plays in a role in managing allergens in a facility.
